No Bake Blackberry Cheesecake from the Holle Kitchen

Ingredients for the base:

Ingredients for the blackberry-topping:

  • 450 g cream cheese
  • 100 g fresh, mashed blackberries
  • 150 g sugar
  • 4 tsp lemon juice
  • ¼ tsp vanilla extract
  • sprinkle of salt

Additional Ingredients:

  • 340 g cream

Preparation time: 10 minutes



  • Crumble the Holle Organic Spelt Biscuits, then mix into the melted butter. Press the mixture firmly into a cake tin and put into the fridge for 2 hours.
  • Stir together all the ingredients for the blackberry-topping.
  • In a different bowl, whip the cream to stiff peaks and then fold into the blackberry mixture.
  • Pour the blackberry cheesecake mixture onto the base and leave in the fridge overnight.
  • Enjoy!
