Ingredients for the base:
- 250 g Holle Organic Spelt Biscuits
- 70 g butter
Ingredients for the blackberry-topping:
- 450 g cream cheese
- 100 g fresh, mashed blackberries
- 150 g sugar
- 4 tsp lemon juice
- ¼ tsp vanilla extract
- sprinkle of salt
Additional Ingredients:
- 340 g cream
Preparation time: 10 minutes
Method
- Crumble the Holle Organic Spelt Biscuits, then mix into the melted butter. Press the mixture firmly into a cake tin and put into the fridge for 2 hours.
- Stir together all the ingredients for the blackberry-topping.
- In a different bowl, whip the cream to stiff peaks and then fold into the blackberry mixture.
- Pour the blackberry cheesecake mixture onto the base and leave in the fridge overnight.
