Carleschi's Einkorn Gigli Rigati is made with stoneground wholegrain einkorn so that none of the amazing nutritional and health benefits of the grain are lost in the milling process. Not to degenerate any of the vitamins, they produce and dry their pasta at a low temperature. Einkorn is the oldest known cultivated wheat, dating back more than 10,000 years! It’s rich in protein, lutein and essential minerals. Pairing that with its warm hue and subtle buttery aroma, you have a super pasta with a delicate gluten structure that creates a silky, tender texture that makes you feel good after eating it.
