Beetroot Canelles

Method:

  1. Preheat oven to gas level 3/ 180 degrees.
  2. Beat eggs until fluffy, then add the oil.
  3. Mix the flour with the baking powder and cocoa powder, sift and stir in spoonfuls.
  4. Add the beetroot and fruit puree, carefully, so as to minimise the amount of air in the batter. The consistency should be thick enough to hold its shape for a short time before settling, but still a smooth, pourable liquid.
  5. Fill the moulds or ramekins. Bake for 20 minutes. Makes about 20 canelles.
